ITALIAN CHICKEN & MUSHROOM CASSEROLE

ITALIAN CHICKEN & MUSHROOM CASSEROLE ... a great mushroom chicken recipe to try !

INGREDIENTS
  • 4 whole chicken breasts, cut in half
  • 1/4 c. oil
  • 3/4 c. onion, chopped
  • 1 clove garlic, minced
  • 2 tbsp. cornstarch
  • 1/2 c. dry white wine
  • 1 lg. can whole tomatoes & liquid
  • 1 1/2 tsp. salt
  • 1 bay leaf
  • 1/2 tsp. marjoram leaves
  • 1/3 tsp. pepper
  • 1/3 tsp. crushed thyme leaves
  • 4 med. zucchini (sliced 1/2" thick)
  • 1 lb. fresh mushrooms
INSTRUCTIONS
Season chicken breasts with salt and pepper to taste. Heat oil in large skillet. Brown chicken on both sides. Cover and cook on low heat for 15-20 minutes. Remove chicken to large baking dish. Pour off all but 2 tablespoons drippings. To drippings add onion and garlic.
Saute until tender.
Combine cornstarch with 1/4 cup of wine. Stir into skillet. Add tomatoes and liquid. Cook and stir until thick, about 1-2 minutes. Stir in salt, bay leaf, pepper, thyme and crushed marjoram. Add
zucchini. Bring to a boil. Cover and simmer 3 minutes. Pour over chicken. Cover and bake at 350 degrees for 20 minutes.Meanwhile, rinse, pat dry and slice mushrooms. Add mushrooms and
remaining wine to casserole. Baste with hot liquid, cover and bake until chicken is fork tender, about 20 minutes. Juice may be thickened if you wish. Serve with rice or noodles (preferred). The mushroom chicken recipe is ready to serve,...nice one ! Enjoy !

HERBAL MUSHROOM CHICKEN

HERBAL MUSHROOM CHICKEN ...a nice mushroom chicken recipe...great taste !

INGREDIENTS
  • Non-stick cooking spray (low sodium)
  • 4 boneless, skinless chicken breasts, tenderized until flat
  • 9 slices Armour Star sliced dried beef (95% fat free)
  • 1 1/2 c. cooked wild rice
  • 1/4 tsp. dried thyme
  • 1/4 tsp. dried oregano
  • 1/4 tsp. rosemary
  • 1/4 tsp. marjoram
  • 1/4 tsp. basil
  • 1/4 tsp. parsley flakes
  • 1/2 tsp. rubbed sage
  • 1/2 tsp. nutmeg (optional)
  • 6 fresh mushrooms, sliced (approx. 2 c.)
  • 1 can Healthy Request cream of mushroom soup, undiluted
  • 3/4 c. plain nonfat yogurt
  • Toothpicks

INSTRUCTIONS
1. Take a 9 inch square baking dish and coat with non-stick cooking spray.
2. Place dried beef on the bottom of the dish, making sure bottom of the dish is covered.
3. Mix cooked rice and spices together in medium mixing bowl.
4. Spread about 2 tablespoons of rice mixture onto each chicken piece, pulling up the sides, holding the rice as stuffing, and secure with toothpicks. (Save remaining rice mixture to serve with the finished chicken dish.) Place chicken on top of dried beef.
5. Place sliced mushrooms around chicken.
6. Mix and spoon soup and yogurt over chicken and mushrooms.
7. Bake at 350 degrees for about 1 hour or until chicken is completely cooked. Serves 4.
Hint: Vegetable rice pilaf adds a different tasty stuffing option.
Make your own by adding dehydrated vegetable flakes to rice. The mushroom chicken recipe is ready...enjoy the feasts ! Bon apetit !

CHINESE VELVET CHICKEN & MUSHROOMS

Try this nice mushroom chicken recipe ...the CHINESE VELVET CHICKEN & MUSHROOMS

INGREDIENTS
  • 3 chicken breasts, boned & skinned
  • 2 egg whites
  • 3 tbsp. cornstarch
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1/4 tsp. ground white pepper
  • 2 tbsp. dry sherry
  • Flour
  • 1/2 c. oil
  • 1/2 lb. fresh mushrooms
  • 1 1/4 c. water
  • 2 packets chicken flavored broth mix
  • 1/2 lb. fresh snow peas
  • 1/2 c. sliced water chestnuts

INSTRUCTIONS
In a small bowl, combine egg whites, 2 tablespoons cornstarch, sugar, salt, pepper and sherry and mix until smooth. Dredge chicken in flour; shake off excess and dip chicken into batter.

Saute chicken in hot oil (do not let pieces touch), for 3 to 4 minutes. Pour off all but 3 tablespoons of oil and saute mushrooms for approximately 5 minutes. Remove mushrooms. Add 1/4 cup of water to oil drippings and stir to loosen particles from the bottom of skillet. Combine remaining cup of water with one tablespoon cornstarch and broth. Add to skillet and bring to boil. Add snow
peas, water chestnuts, chicken, and mushrooms. Heat and serve over rice or chow mein noodles. The mushroom chicken recipe is ready to serve....enjoy it !

INGREDIENTS
  • 1 fryer, skinned or 8 thighs or 8 drumsticks
  • 1 stick butter
  • 2 chicken bouillon cubes
  • 1 1/2 c. water
  • 1 can Golden mushroom soup

INSTRUCTIONS
Brown chicken in butter in iron skillet. In saucepan, dissolve bouillon cubes in water. Add Campbell's mushroom soup. Then add gravy to skillet over chicken and simmer for 30-45 minutes. The mushroom chicken recipe is ready to serve....enjoy !

CHICKEN PAPRIKAS WITH MUSHROOMS ...a nice mushroom chicken recipe to try !

INGREDIENTS
  • 1 med. onion
  • 1/4 lb. mushrooms, cooked and chopped
  • 2 tbsp. shortening
  • 1/4 tsp. black pepper
  • 1/2 tsp. paprika
  • 1/4 tsp. salt
  • 3 1/2 lbs. chicken, cut up in pieces
  • 1 bay leaf
  • 1 1/2 c. tomato juice
  • 1 c. sour cream
  • 1/2 tsp. vinegar
  • 2 tbsp. flour

INSTRUCTIONS
Brown onions in shortening; add cooked mushrooms. Sprinkle chicken with flour. Add chicken to the onion and mushrooms and brown; add salt, pepper, and paprika. Add bay leaf, slowly stir in the sour cream and the tomato juice. Add the vinegar; cover and simmer slowly 45 minutes or until chicken is tender. Remove bay leaf just before serving. CHICKEN MUSHROOM BAKE RECIPE

INGREDIENTS
  • 3 broiler fryer chickens, cut up
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 c. chopped fresh mushrooms or 2 (4 oz.) cans stems and pieces
  • 1 lg. onion, cut up
  • 1/2 c. water
  • 4 tbsp. lemon juice
  • 1/2 tsp. tarragon

INSTRUCTIONS
Preheat oven to 375 degrees. Arrange chicken in baking dish. Combine all other ingredients and pour over chicken. Use mushroom liquid for part of water. Bake about 1 1/2 hours. The mushroom chicken recipe is ready...enjoy the bake !

INGREDIENTS
  • 2 lbs. boneless chicken
  • 2 oz. corn oil
  • 1/2 tsp. salt & pepper
  • 2 lg. cans mushrooms (do not drain)
  • 3 oz. butter
  • 4 oz. cooking sherry
INSTRUCTIONS
Cut chicken into bite sizes. Flour and brown in corn oil. Add salt and pepper. Pour off excess oil. Add mushrooms with liquid. Add butter. Allow butter to melt. Add sherry and cook 5 minutes. Pour into casserole and bake for 15 minutes in 350 degree oven. The mushroom chicken recipe is ready to serve....enjoy !
