INGREDIENTS
- 1 med. onion
- 1/4 lb. mushrooms, cooked and chopped
- 2 tbsp. shortening
- 1/4 tsp. black pepper
- 1/2 tsp. paprika
- 1/4 tsp. salt
- 3 1/2 lbs. chicken, cut up in pieces
- 1 bay leaf
- 1 1/2 c. tomato juice
- 1 c. sour cream
- 1/2 tsp. vinegar
- 2 tbsp. flour
INSTRUCTIONS
Brown onions in shortening; add cooked mushrooms. Sprinkle chicken with flour. Add chicken to the onion and mushrooms and brown; add salt, pepper, and paprika. Add bay leaf, slowly stir in the sour cream and the tomato juice. Add the vinegar; cover and simmer slowly 45 minutes or until chicken is tender. Remove bay leaf just before serving. Serve with dumplings. The mushroom chicken recipe is ready to serve...enjoy !
